Watermelon Salad with Feta
Watermelon is the ideal summer fruit. This salad with feta cheese has sweet and salty in perfect combination. The combination of watermelon with feta, cucumbers and fresh herbs, is another level of delicious. Fruit salad grows up.!
Salad Ingredients:
Watermelon - 1 small or 1/2 large - peeled & cut into cubes ( or if you want to be fancy use a melon baller)
English Cucumber - diced ( I use English cucumbers because they are sweeter and you do not have to peel them)
Mint & Basil leaves - 1 cup packed of each (or 15 leaves of mint and 15 leaves of fresh basil), roughly chopped or torn.
Creamy Feta Cheese or Vegan Feta Cheese - 1/2 cup or more of creamy crumbled feta. Start with a small block of feta packed in the brine, then crumbling it myself. Feta packed in the brine is more creamy and not as salty as dry, already crumbled feta
Dressing Ingredients
While you may not think a watermelon salad wouldn't need a dressing, this dressing brings all the flavors together to make them pop!
Honey - 2 tablespoons
Lime Juice/zest - 1 tablespoon or the juice from one Lime & zest approx. 1 teaspoon of zest. (It really brings out the flavor of the watermelon & cucumber)
Extra Virgin Olive Oil - 2 tablespoons
Kosher Salt - A pinch
You can make the salad dressing ahead of time and wait to dress the salad just before serving. It should keep in your fridge for up to 3 days
Assembly
Add your watermelon cubes, cucumber, torn fresh herbs in a large salad bowl or platter.
Pour the honey-lime dressing on top, then gently toss to combine (I go lightly on the dressing)
Finally, crumble feta cheese and sprinkle it all over the salad
This makes the salad foundation. Adding a few other ingredients can make the salad your own. For example:
Blueberries: I love blueberries and add a couple of cups of fresh blueberries when in season to give more color and fresh fruit flavor.
Shallots or red onions: Thinly sliced shallots will add a little punch of savory and an extra pop of color.
Avocado: Dice up a creamy avocado to add a little indulgence and healthy fat to this salad.
Hot peppers: You can slice up some jalapeño rings for added crunch and heat.
Red pepper flakes such as Aleppo pepper: Aleppo pepper over watermelons is not too spicy but adds enough of a kick with hints of sweetness.
