Three Bean Salad
This bean salad is simple sweet and travels well for all those summer picnic plans.
Measure and combine one cup each of cooked and rinsed chick peas, kidney beans,white beans and for a little more sweetness one cup of corn.
For better digestion, leave beans in filtered water overnight up to 12 hours. This helps eliminate the part of the bean that creates gas and bloating in your body
3 tbsp olive oil,
1 tbsp apple cider vinegar
1-2 cloves of grated garlic
salt and pepper to taste
1 tbsp of either fresh chopped basil, coriander, mint or parsley.
Combine beans and corn with vinaigrette, chill and serve!
