Quinoa Meatloaf
Quinoa Meatloaf
For 4 servings:
1 pound minced beef or turkey
2 flax eggs (Or 2 eggs if not sensitive)
1/4 cup of uncooked quinoa
1 medium onion (diced small)
3 garlic cloves (chopped small)
1 tsp Thyme
1 tsp Rosemary
1/4 tsp Black Pepper
1 tsp Salt
Coconut oil or Olive oil to grease pan
Cook quinoa as directed. Preheat oven to 350 F. Chop onion, garlic, and cloves finely. Add cooked quinoa and all ingredients to a large bowl and mix together. Grease a loaf tray with coconut or olive oil, then add the mixture and bake for 1 hour.
