July 04, 2013 • Recipes, Vegetables

It starts to feel like spring when we begin grilling fresh local vegetables on the BBQ. This new asparagus recipe has quickly become a staple in our household and has been a hit with family and friends alike. Bon appetite!

Ingredients

  • 1 pound asparagus (the stalks shouldn’t be too thin)
  • 2 Tbsp Asian (dark) sesame oil
  • 1Tbsp soy sauce (or Bragg’s for those seeking wheat free options)
  • 1 Clove garlic, minced
  • Coarse salt and black pepper
  • 2 Tbsp sesame seeds

Preparation

Set up the grill for direct grilling and preheat to high

Snap off the woody bases of the asparagus and discard. Skewer 4 or 5 asparagus spears together, using toothpicks or bamboo skewers. Do this crosswise in two places: just below the tips and 1.5 inches from the bottom. You will end up with something that looks like a small raft.

In a small bowl, combine sesame oil, soy sauce, and garlic and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and a lot of pepper.

When ready to cook, place the asparagus rafts pm the hot grate and grill until nicely browned on both sides. Sprinkle the rafts with the sesame seeds as they grill. You can serve them as rafts or un-skewered.
