Roasted Zucchini with Thyme

Cut your zucchini into 3 inch length pieces and then quarter them. Toss in extra virgin olive oil (1-2 Tbsp) and Thyme (a few shakes). Roast in the oven (400oF) or on the barbeque until tender. Toss with a little balsamic vinegar. Enjoy!
