Chili-lime Sweet Potatoes
1-2 pounds sweet potatoes-peeled and cut into 1" or a little smaller cubes
Coat and toss with extra virgin olive oil and generously with chili powder-some sea salt and black pepper
Place on cookie sheet and put in oven preheated to 400 degrees for about 30 minutes-flipping over half way through
Once they come out of the oven let them cool a bit and add this dressing:
Juice of 1-2 fresh limes (important that they are fresh)
1-2 tsp of olive oil
½ tsp cumin
½ tsp chili powder
Toss well over the sweet potatoes and stir in ¼ cup fresh-finely chopped cilantro leaves
Great tasting warm-and great cold too!
