Vegan Gluten Free Banana Cookies
3 ripe bananas
2 cups gluten free oats
1 cup dates
1/3 cup Olive Oil
1 tsp vanilla
(optional add cinnamon, nutmeg or walnuts )
In a large bowl, mix all the ingredients together and let sit for 15 minutes. Drop by the teaspoonful onto an ungreased coolie sheet. Bake at 350 for 20 minutes or until light brown.
